Pineapple Pizza
This is a new take on the pineapple and ham pizza that uses a tofu based, fake Canadian bacon. Serve with salad on the side.

Pineapple Pizza
Serves 4
Pizza Dough (any brand refrigerated dough works fine, or homemade if your prefer – extra points for whole wheat)
Pizza sauce – store bought or see recipe below
1/2 red pepper diced
1/2 cup pineapple diced, (drained canned pineapple is fine)
2 slices Yves® Meatless Canadian bacon (look for it in the produce isle with other tofu products)
1 cup shredded Mozzarella or Italian cheese
Preheat oven to 400 F. Lightly spray pizza dough with cooking spray and roll out pizza dough to fill the pan. Top with about 1/2-1 cup pizza sauce, depending on how much pizza sauce you like on your pizza. Spread out 3/4 cup cheese. Top with the red pepper, pineapple, and a few slices of meatless Canadian bacon cut into bite size pieces. Top with remaining cheese. Cook for 12-18 minutes, depending on the directions for the dough you are using. It is finished when the crust in golden and the cheese has melted. Cut into 8 slices, and serve with some red pepper flakes if desired.
Pizza Sauce
1 Tbsp olive oil
1 clove garlic pressed
14.5oz can fire roasted tomatoes, drained (any variety of canned diced tomatoes will work)
1 Tbsp tomato paste
1/8 tsp dried basil
1/8 tsp dried oregano
pinch sugar
salt and pepper
Pinch cocoa powder (optional)
Heat olive oil over medium in sauce pan. Add garlic, cook for 1 minute. Add tomatoes, tomato sauce, basil, oregano, sugar, and salt and pepper to taste. When it starts to bubble, lower heat. Cook 10-20 minutes. Mash up the tomatoes with the back of a spoon or a tomato masher until smooth. You can also double the recipe and freeze extras for future use.
